Two Recipes:


Taco Salad


1 pound ground beef or turkey
1 (16 ounce) can tomato sauce
1 Tbs. minced dried onion or 1/2 an onion, minced
1 tsp. garlic powder1 Tbs. chili powder
1 tsp cuminsalt and pepper to taste

Brown the ground meat. If you're using a fresh onion, cook it with the meat. Add the seasonings and tomato sauce and simmer 10 minutes.

1 head lettuce, chopped
1/4 cup sliced black olives
1 cup (or more) shredded Cheddar cheese
3 tomatoes, chopped1 can (15 ounce) beans, black or kidney
1 cup crushed tortilla chips
1 avocado, sliced
Italian or Catalina salad dressing or salsa

Make up the salad and add the slightly cooled ground meat mixture.

*It was delicious!

This morning I am making Pumpkin Muffins.

Pumpkin Muffins

1 1/2 cups flour
1/2 tsp. salt
1 cup sugar
1 tsp. baking soda
1 cup pumpkin puree
1/2 cup vegetable oil
2 eggs, beaten slightly
1/4 cup water
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. allspice
1/2 cup chopped nuts (optional)

Preheat the oven to 375.

Mix the flour, salt, sugar, and baking soda together on a piece of wax paper.
In a bowl, mix the pumpkin, eggs, water, and spices. Add the dry ingredients and mix well, but not too much.

Stir in the nuts if you're using them.

Pour into muffin tins and bake for 20 minutes.

Options: Pour into a loaf ban and bake at 350 for one hour.

So far it looks good.......I will come back with an update on them after my critics have tasted them.

This mornings cooking experience was a disaster!!! Listen to what this ditzy in the kitchen girl did. Okay so first I decided to cook pumpkin muffins for breakfast and you have to remember we have guest over so I am especially wanting to make breakfast yummy. Well I put all the ingrediants in a bowl and then opened the last ingrediant for this recipe which was pumpkin purree, well it didn't look normal so I checked the can espiration date and it was like December 2001! Okay, new plan. I decided to make banana pancakes and I have made these before but I accidently looked at the wrong recipe and like before poured all the ingredients in before noticing that I didn't have all of them. But I made them anyway. I also made some malto meal to go with it. Come to find out I had run out of butter and syrup!! So I served my company pancakes with no syrup and dry malto meal because I had no butter!!! Fabulous. They all of course said it was good. I am glad they thought so cause I have had better, much better.
