Breakfast:

Tuesday... Blueberries over Vanilla Yogurt and Bananas
Wednesday... Oatmeal with cut up fruit
Thursday... Pancakes with Blueberry sauce
Friday... Oatmeal and Yogurt
Saturday... Donuts
Sunday... Cereal or Malto Meal with fruit

Lunch:

Tuesday... Potato Soup leftovers
Wednesday... Tacos with Spanish Rice
Thursday... Grilled Cheese with cut up veges
Friday... something simple
Saturday... ?
Sunday... after church luncheon

Dinner:

Monday... Potato Soup and Cornbread
Tuesday... Taco Salad
Wednesday... Chicken Salad/veges and Mash Potatoes
Thursday... (we will have company)
Friday... Superman's Birthday Party
Saturday... Church Festival
Sunday... leftovers from week

We have a party this Friday for my Superman who is turning 7 and family will be with us so I am not sure what we will be doing for Friday and Saturday meals other than the party food.

Two Recipes:


Taco Salad


1 pound ground beef or turkey
1 (16 ounce) can tomato sauce
1 Tbs. minced dried onion or 1/2 an onion, minced
1 tsp. garlic powder1 Tbs. chili powder
1 tsp cuminsalt and pepper to taste

Brown the ground meat. If you're using a fresh onion, cook it with the meat. Add the seasonings and tomato sauce and simmer 10 minutes.

1 head lettuce, chopped
1/4 cup sliced black olives
1 cup (or more) shredded Cheddar cheese
3 tomatoes, chopped1 can (15 ounce) beans, black or kidney
1 cup crushed tortilla chips
1 avocado, sliced
Italian or Catalina salad dressing or salsa

Make up the salad and add the slightly cooled ground meat mixture.

*It was delicious!

This morning I am making Pumpkin Muffins.

Pumpkin Muffins

1 1/2 cups flour
1/2 tsp. salt
1 cup sugar
1 tsp. baking soda
1 cup pumpkin puree
1/2 cup vegetable oil
2 eggs, beaten slightly
1/4 cup water
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. allspice
1/2 cup chopped nuts (optional)

Preheat the oven to 375.

Mix the flour, salt, sugar, and baking soda together on a piece of wax paper.
In a bowl, mix the pumpkin, eggs, water, and spices. Add the dry ingredients and mix well, but not too much.

Stir in the nuts if you're using them.

Pour into muffin tins and bake for 20 minutes.

Options: Pour into a loaf ban and bake at 350 for one hour.

So far it looks good.......I will come back with an update on them after my critics have tasted them.

This mornings cooking experience was a disaster!!! Listen to what this ditzy in the kitchen girl did. Okay so first I decided to cook pumpkin muffins for breakfast and you have to remember we have guest over so I am especially wanting to make breakfast yummy. Well I put all the ingrediants in a bowl and then opened the last ingrediant for this recipe which was pumpkin purree, well it didn't look normal so I checked the can espiration date and it was like December 2001! Okay, new plan. I decided to make banana pancakes and I have made these before but I accidently looked at the wrong recipe and like before poured all the ingredients in before noticing that I didn't have all of them. But I made them anyway. I also made some malto meal to go with it. Come to find out I had run out of butter and syrup!! So I served my company pancakes with no syrup and dry malto meal because I had no butter!!! Fabulous. They all of course said it was good. I am glad they thought so cause I have had better, much better.

Tonight I decided to cook something out of the box. Things were getting a little monotnous at the dinner table so I thought I would spice them up just a tad. So I found this great sounding recipe online, so I bought everything for it. There are actually 2 different recipes that I tried one was Parmesan Baked Chicken and the second was Potatoe Croquetts. Now let me tell you what happened. First of all I am in the kitchen all excited like a little kid about my new adventure and I just knew that my family was just going to love this meal. I am cooking my little heart in our hot kitchen I get all the items ready and everything is going fine. The recipe for the Potatoes said to form them and then chill them for an hour well that is great but I didn't have an hour so I put them in the freezer and thought I would leave them in there for just a few minutes. So I go back to cooking the chicken and cleaning up and about a 15 minutes go by and I remember the potatoes so I grab them and when I go to pick one up it was as hard as a rock. Ha! I laughed so hard and of course my husband walks in at that time. So I had to start over with those and they worked out okay in the end but they just kind of fell apart as I suspescted they would. So after all of it was done and I set all the plates and put them all on the table I called the infamous dinner call.....(proudly I might add)"Dinner's ready guys!" They come to the table and my precious son Eli takes one look at his plate and says..."O, that doesn't look goooood." I about died. Luckily I was in a giddy mood and shook it off and said well it tastes better than it looks I bet. In the end it was all delicious. The chicken was fabulous but next time I will make it over rice I think.

Oh if you want the recipe for those here they are maybe you will have better luck with the potatoes:

Well after posting the recipe I realized why my potatoes didn't work out right and the short anwser is I didn't read the directions at all! All I did was make mashpotatoes and form them and then roll them in bread crumbs and cook them!! What the heck was I thinking obviously nothing. Ha ha ha I can't wait to tell my husband we are going to have a good laugh at my expense tonight.


Baked Parmesan Chicken
4 boneless skinless chicken breasts or equivalent chicken tenders
1/4 cup melted butter
1/2 tsp garlic powder (or probably a couple of minced garlic cloves)
1 Tbs Dijon mustard
1 tsp Worcestershire sauce
1/3 cup bread crumbs
1/3 cup grated Parmesan cheese
1/8 cup dried parsley

Mix together the butter, garlic powder, Dijon, and Worcestershire in a dish. (I typically use old pie pans for this.)
Mix the bread crumbs, Parmesan, and parsley together in another.
Dip the chicken in the butter, then in the bread crumbs, then place in a buttered or greased 9x9 or so pan. Bake at 350 for 50-60 minutes, until done through.

Potatoe Croquettes

It works best if you can let the croquettes chill for an hour after forming.

leftover mashed potatoesegg(s) (one per cup of mashed potatoes, roughly)
flour as needed
garlic and/or onion powder to taste (optional)
bread crumbs
Mix the egg(s), mashed potatoes, spices, and flour until the mixture is firm enough to handle gently. Pat them into a patty or roll them into a cylinder, roll in bread crumbs, then lay on a plate covered with wax paper. Refrigerate an hour if you have time.
Heat a thin layer of oil and fry the croquettes, about 5 minutes on each side. They should be browned and crispy on the outside, soft on the inside.
